Where the Beer Garden Was Invented

Bamberg is a city of 9 breweries in a town of 77,000 — more per capita than almost anywhere on Earth. But what makes Bamberg truly special isn't just its brewery density — it's the beer cellars (Bierkeller) carved into the hillsides that surround the town. This tradition, dating to the 1500s, is the origin of the beer garden itself.

The Story of the Keller

Before refrigeration, Bavarian brewers stored their lager (bottom-fermented beer) in underground cellars through the summer. They dug into the limestone hillsides and planted chestnut trees above to provide shade and keep the cellars cool. Eventually, someone had the brilliant idea of sitting under the chestnut trees with a beer while it stored — and the beer garden was accidentally invented. In fact, the Bavarian beer garden laws that say beer gardens can bring your own food (Brotzeit) come from this tradition: the breweries sold beer but not food, so you brought your own to eat under the shade.

The Five Great Cellars

From May through September, Bamberg's beer cellar season is in full swing. The main destinations are:

• Spezial-Keller — Smoked beer (Rauchbier) brewed since 1536, served underground in a cave-like pub and upstairs on the terrace
• Schlenkerla-Keller — Bamberg's most famous Rauchbier brewery. Their beer tastes like liquid campfire — it's brewed with malt dried over beechwood fires
• Greifenklau-Keller — The most traditional, with the highest percentage of locals, stone tables, and a sunset view over the old town
• Felsenkeller — The original cave cellar built in 1405, with actual stalactites in the brewery vault below
• Wilde-Rose-Keller — A charming smaller cellar with wild rose bushes, more intimate atmosphere

What to Expect

Most Kellers open around 3-4 PM and run until last call. You cannot reserve tables — it's first come, first served. Bring a blanket for the grass areas. The atmosphere is pure Gemütlichkeit — wooden tables, no Wi-Fi, strangers becoming friends over a Maß. Bring cash — most Kellers are card-free zones.

Bamberg's UNESCO World Heritage old town is one of Germany's most beautiful medieval cities. Visit the Bamberg Cathedral (Emperor Henry II's tomb), the Altes Rathaus (Old Town Hall built on an island in the river), the Klein Venedig (Little Venice) fishermen's quarter, and the Neue Residenz rose garden. The entire old town is walkable from most beer cellars.
